I wanted to share with you a very simple and healthy pancake recipe that my family has enjoyed for many years. We use organic flour and maple syrup and only fruits that are in season...


2/3 cup whole wheat flour
2/3 cup wheat germ
2/3 tbsp baking powder
2 eggs
2/3 cup milk
fruit in season ( apples, pears, blueberries, peaches)

Blend all ingredients (except fruit) in mixing bowl just enough to remove any lumps. Gently mix in or place on top of each pancake the fruit. Heat skillet on med/low and add a little grape seed oil (this gives a nice crisp edge).
